I think you had a typo. Its Shongai Empire. You are right. The Shongai Empire was ruled by a tribe called the Shongai and started in the 15th Century but a smaller Shongai state started in the 9th Century.
Its rulers were Muslims and expanded from Gao(the capital to Burkina Faso, Mali, Nigeria and even extended to the Senegambia region through vassal chiefs who paid taxes. A notable capital then in Mali was Kumbi Saleh which the capital of one of the Mali Empire region of Wagadou. Kumbi Saleh was destroyed by the Almoravids, a group of religious fanatics from the north under General Abu Bakr in 1070. The Mali Empire preceeded the Shongai Empire but the latter covered almost all the territory of the former.
The name Kumbi will show itself in Gambian commerce with a bar of soap named after it called Kumbija by Sankung Silla. The Serahule were chief traders in the Shongai Empire, which was very prosperous, and the best era of business the region will forever see. Askia Muhammed was credited for creating departments of state like Agriculture, Defence and Commerce, a reason why he succeeded in glorifying his legacy. Trade flourished and hence the Moroccans wanted a share. They were muslims who also went on pilgrimage like Mansa Musa.
I am not sure if the name Kumbu Sora is not derived from the name Kumbi Saleh. The legendary Lalo Lebba wrote a song about Kumbu Sora.
In Gambian folklore, you hear of kings going "East" (TILIBO) to pay taxes and reaffirm their allegiance to the Crown King. Gambia had always throughout history been a vassal state of some powerful crown Kings in the East ( Mali, Shongai etc)
Askia Mohammed was preceded by Sunni Ali and after Askia Mohammed, Askia Daoud came on the throne who had the longest rule of nearly 33 years. After him, there were problems until the Moroccans under Sultan AhmadI Al-Mansour Saad sent one of his generals Judar Pasha who defeated the ruler of Shongai Empire in 1591 at the Battle of Tondibi. Judar Pasha was actually a citizen of Spain who was captured as a boy and raised in Morocco.
Eventually the Moroccans could not control the vast empire of Shongai and it fell into smaller kingdoms.
By the way Askia Muhammed was a Mandingo ruler not from the original Shongai Tribe that initially ruled the Shongai Empire. Please note that the Shongai Empire covered all of present day Mali, Northen Nigeria, Bukinafasso, Guniea and all the way to the Gambia.
This was long before the Courlanders came to the Gambia but before Al Viso Camostco under Prince Henry the Navigator sent him along the West African coast.
I did a project on Shongai Empire at High school and it still comes handy.
